Recipes: Homemade mac and cheese

Being from New England, it is always a challenge to find some warm, comfort food that won’t add that dreaded “Winter Weight.” This recipe, adapted from a diet recipe book was tweeted so it could be adapted for my picky eating, family’s taste buds. It is so delicious that my husband doesn’t even know it is healthy! Try it, you’ll love it!
LUSCIOUS LOW FAT MACARONI AND CHEESE
Pre-heat oven to 350
Gather the following ingredients:
4 cups hot cooked elbow or small penne pasta
Egg substitute equivalent to 1 egg
3/4 C. fat free sour cream
2 C. low fat cottage cheese
1/2 C skim milk
8 oz. reduced fat shredded cheddar cheese
1/4 tsp. ground pepper
1/2-1/3 tsp of salt
4 tablespoons of melted low fat margarine
1/4 C. flavored bread crumbs
While pasta is cooking, mix together the following ingredients in a large bowl:
egg substitute, slightly beaten
sour cream
cottage cheese
cheddar cheese
skim milk
ground pepper
salt
2 Tablespoons of margarine
Next:
1. Spray a 2 quart casserole dish with cooking spray
2. Add cooked pasta to your mixture and combine completely
3. Pour mixture evenly into prepared casserole dish
4. Mix bread crumbs and the rest of the melted butter in a small bowl
5. Sprinkle mixture over the top of your casserole
6. Cover with aluminum foil and bake in a 350 degree oven for 45 minutes.
7. Remove foil and bake for an additional 5 minutes
8. Remove from oven and let meal sit for 2 minutes and it is ready to be served.
I have also prepared this meal before time and served it later in the day or even the next day. The only difference was that I omitted taking the cover off and cooking for the additional 5 minutes. I found out (the hard way) that this tends to dry out the meal, so I reheat the covered dish in a pre-heated oven at 275 for 20 minutes.
This delicious, low-fat comfort food serves from 6-8 people. If I am lucky enough to have leftovers, I separate the leftovers into individually measured serviings, put into freezer containers and freeze. That way I can defrost my meal in my microwave and reheat (also in the microwave) on a day when I am cold, or need some comfort food, or am just craving this luscious meal! Enjoy!

Diet. It’s a four letter word. It’s also very misleading.
A diet is ANY way you eat. It’s the adjectives with the word that matter. For instance, a “bad diet” would be something not healthy for you. A good dient is one that is appropriate for you as an individual. Not all diets are good diets. no matter how fat and calorie free they may be.
I am allergic to fruit. The grapefruit diet is a great weightloss diet because the grapefruit helps burn calories. Yet for me personally, it’s a REALLY bad diet.
I also tend to be anorexic, even though I am overweight. I will sometimes go for several days without food. Even to the point where I pass out. I’ve been like this for years so my metabolism is very VERY slow. So a high carb diet is bad, but a high calorie diet might be pretty good for me.
Consider diet recipes. If you are diabetic, you need a low amount of complex sugars. If you have high blood cholesterol or high blood pressure, you might have to limit fats but not sugars. If you have allergies, your diet recipes should take into consideration those foods to which you have a reaction.
Any recipe can be tailored to your personal diet, so long as it is something you can safely eat. A simple peanut butter and jelly sandwich can be made with almond butter, gluten free bread, and any variety of jams or jellies with or without most ingredients. It really is as easy as thinking it through.
Use olive oil instead of peanut oil; it will vary the taste somewhat, but not enough to be a big deal. Use cooking sprays (vegitable oil based) instead of greasing or buttering a pan to reduce fat and calories. There are several sugar substitutes that can be added to your recipes instead of real sugars. Substitute rice for pasta and reduce carbs.
